1. It is NOT 500K. It is 500 Ohm.
2. You actually might want a lower pot value as the output is proportional to that resistor in the ADJ pin to GND path. So if you have 220 Ohm pot, you will have the range from 2.5V and down. Accurately trimmed. Though 500 will work also.
